Cucumber Yogurt Soup

Ingredients:
3 medium sized cucumbers
16 oz plain yogurt
1 clove garlic
a handful of dill and mint
a couple of tablespoons of sparkling water or seltzer
1 tsp salt
a few dill fronds for garnish

Preparation:

Peel and cut your cucumbers. Place all the ingredients in a food processor and process for 1 minute until all the ingredients are blended. If you prefer you can press the soup through a chinois or a finely meshed sieve. I prefer my soup to have a tiny bit of texture. Ladle into bowls and garnish with dill.

Serves 2.
